Ew.
Since you've got 30 faith, you might want to try the Saint's Bident if you like spears, a lightning or lightning-buffed raw longsword/lothric sword if you like straight swords, or a lightning/blessed Lothric Greatsword if you like big weapons.
There is no true "best", though. Some weapons will be better in certain circumstances
EDIT: Also, there's places you can co-op at SL 90-120 with +10, just FYI
And I seriously dont understand the dislike for 27 Vig. Solid 1000 HP without multipliers, after that another points wont add as much.
Yhorm's machete, great club, ledo and millwood axe for str, add a simple caestus and you can maintain their WA forever.
Or an executioner greatsword+lingering dragoncrest ring, buff it, and then see your fp replenish every time you kill an enemy to later buff again. Or just leave it on your back and use any other weapon.

they are not the best for PVE
just look at weap stats
Faster combos on twinblades, better reach on gotthards + I think gothards does a bit more damage.
Long swords have quick attacks with minimal recovery time, low stamina useage, most have a good sweep to them for unlocked fighting or defending while surrounded, and some have a piercing strong attack with a little extra reach. Their only real weakness is a tendency to cause little poise damage (so no staggering), and for their attacks to bounce off of shields -- beyond that, they are weak to virtually nothing.
Now, granted, they aren't the best everywhere. When I was doing the Ashes of Ariendel DLC, I found myself annoyed by the Millwood Warriors -- not only did they do a lot of damage, but they actually defended themselves with shields, and I saw a marked improvement switching to a 2h strength weapon that could actually break their guards and/or stagger them. For everything else though, it's hard to go wrong with a Straight Sword.

rings: lightning clutch + chain + RoF+3 + life+3 (if you can trade or just go to ng++ since you are all about PVE)
Lightning LKS+8 will have close to 500 AR which is not bad + you will have close to 1200 unembered health and around 120 stamina points.
The weak side is low attunament and only 1 spell slot. You can place there something like a med-heal and use simple-infused parry tool to regen fp.
LKS is top tier weapon in both PVP and PVE, you just need to build right for what you want to do.
PS.
Clutch is a handicap in PVP as it is nerfed there, but since you do not care you will be fine.
Sellsword speed makes them have more DPS, even if gotthard have higher AR.
If you don't want to use buffs use this https://mugenmonkey.com/darksouls3/289337 You still can use resins and bundles to buff tho. And replace the untrue dark ring with lloyd's sword ring, pontiff's right eye, or anything else if you don't care about fashion.
Makes me wonder what would be the point to continue playing. I mean, its like climbing without aid to the top of the mountain to get top quality climbing gear left on the top - useless now since you already reached the top.
What about the reach? I tried using sellsword but had hard time due to how I had to basically hug enemies due to LB low range.
