Chaos bed is faster, has a bigger hitbox and deals more damage with a direct impact.
It's also worth mentioning that the fire orb is better when free aimed and for lava chip damage, and it does better in smaller tighter spaces where the enemy doesen't have a lot of space to roll away from the explosion, since it is slower, the hitbox seems to linger for a little while so you can sometimes mess up with people's dodge timings by aiming behind them or at their feet or just predicting where they're going to roll. On the contrary, chaos bed is not good at that, since it is very fast the dodge timing is more or less the same regardless of where you aim it, but it has better chances of catching the opponent off guard or stuck in some animation frames where they can't roll.
Overall I think chaos bed vestiges is better because it's damage and hitbox are a lot more reliable than the chaos orb, and also because it's less dependant on terrain, I'd go as far as to say that chaos fire orb is near useless when fighting people in open areas like the pontiff balcony or just anywhere in the hollow arena except the dragon ruins.
In the end, against somebody who tries hard enough, the only spells that are worth using will be lightning arrow, homing soulmass, farron flashsword, fire surge, black flame and probably the deep soul and soul dregs. every other form of magic can be easily dodged by just keeping some distance, sidestepping or just running away from the spell until it fades away.
