There should be consequences for one group if you join the other, no matter how small it is. Hell, not like you miss too much item wise. Only big thing you'll really want is a useful ring, that's it besides fashion.
Oh, and if the game triggers you so much, why not play something different rather than whining on the forums? Actually, even better! Why not just play the game normally, and then re-go through it on NG (or a new game since you absolutely hate NG+ for some reason). On the second time you could go for the other options that you missed.
You cannot complete every side quest in one playthrough.
I don't know if you played the first part of the series (i assume you didn't because you wouldn't get this angry if you did) but that one is way more cryptic on questlines and one small wrong step can get you a very long painful experience (i remember getting stuck on Capra Demon because i was too ignorant to realise that i can drop some equip to roll faster).
Getting penalized for making mistakes is a huge part of FromSoftware's game design and yes that may suck but on the same side the game rewards you for becoming better or being smart and observant (Payyring is a good example since it's difficult for newbies to master but very rewarding against certain otherwise difficult bosses)
TL;DR
This game won't hold your hand like other Triple A titles. Should not make you rage that much, though. Because it also rewards you on the same page. You just have to use your head a bit more.
Dark Souls is meant to be played blindly. The game purposefully forces you to discover things on your own.
You can replay the game after you beat it. The game gives you the option of starting Journey 2 (known as New Game Plus), and you retain all items (except for special items like Divine Tomes and Sorcery Scrolls) and covenant ranks. Sirris will only get pissy if you give a tongue in your current journey, and is not affected by previous offerings in other journeys.
If you’re going for every achievement, you will need to go to NG++. It’s alright if you miss an item or two.
You are missing a gesture (if you didn’t speak to her twice already), a Blessed Mail Breaker (easy to recreate), the Cat Ring (just use Spook), her armor (not that great), a Talisman (also not great), and another armor set if you fail her questline.
My own ignorance? Do you know that i've been reading the entire wiki page word for word before killing any single enemy or joining any single covenant?
As to the topic at hand. The game has always been on the cryptic side. You have had 2 prior games to learn this much. 3 if demons was the same in that area. Had about 6yrs and some change to get it and decide if it was for you. Full 9 and some change if demons included.
To get everything requires multiple playthroughs (or at the max, just one) to learn what works to what end. Or use a guide. If you don't wish to do either. Then tough.

Literally the first sentence of that is literally "She leaves Firelink Shrine and becomes hostile if the player gives Rosaria a Pale Tongue to increase her covenant's level and may leave if the player kills Company Captain Yorshka (as of regulation 1.05, simply changing your appearance or reallocating stats does not fail her questline)."
