Mendicant's Staff, Shield of Want & another weapon?
Seems to me it's not possible to use all of these at once to make benefit of the extra souls and still have a decent right hand weapon. The shield must be in the left hand or on your back, and as far as I'm aware the staff must also be in your hand to get the bonus rather than just being equipped? IS the only say to have the staff in the right hand and shield in left?

also shield needs to be in one slot not on back for it to count
