...Which.....boss?
bosses are weak to diffrent things.
diffrent elements and physical dammage types.
example. if you are fighting abyss watchers they are weak to lighting and with the right stat investment you can 2-3 shot him at each phase with sunlight spear and lighting steak.
but the same lightning spells wont do as good on pontif cause hes not weak to lightning.
Well the issue there is that there's many ways you can boost attack damage other than just stats. Hitting towards weaknesses, using red tearstone and staying under the HP limit to trigger it's effects, buffs and weapon arts.
The only thing I could even begin to suggest is getting a weapon or magic type you're most comfortable with, boosting the stats as close to the soft cap of I think 50 as possible, then using the highest rated catalyst or upgrade path that suits that stat grouping.
There is no "God Build" for games like Dark Souls. I can recommend certain weapons, magic and playstyles, but then we all play differently. Some might be parry gods and can delete Pontif in one parry using something similar to what I said above, or they could be looking at super charging their magic.
However, for the sake of the topic, here's a site where you can play around with stats and equipment loadouts to see what the numbers would look like. Might help a lot more than I can.

Bottom line is that you know or will know what works and what doesn't work for you. All that damage is meaningless if you cannot land the shot onto the target. So, the best advice I can give on this matter is play around with it yourself and see what carnage you can muster up.
