Jailors don't do any real damage unless you get hit branded in which case the next one is likely to kill you.
Their "ACTUAL" damage is atrocious and they only ever really lunge with a branding iron.

This is probably one of the quickest areas to get through. You honestly don't even have to fight anything if you don't want to. If you're struggling, I presume you ARE struggling & the only thing in the area that poses much of a threat are the jailers, right? You just have to learn how to deal with them and they become super easy. When they try to prod you or do that smoke animation, just roll past them for an easy backstab. Avoid being in their line of sight for an extended period because of their annoying Max HP reduction ability. If you get to the bottom part of the dungeon, past the Giant & the 2 giant rats, there is a room with many jailers. The best way to deal with them is to lure them out 1 at a time with a bow. Note that in addition to the Jailbreaker shortcut, there is also a shortcut outside the room with many jailers (where you get Dragon Torso stone & Lightning Blade) and there is also a "shorcut" from the bottom of the Giant pit (reached via Profaned Capital) which leads right up to the Irithyll Dungeon Bonfire
