Is it worth starting with deprived?
Is it better to Build him?
Is it easier at the end with good choice of skill ups?
Also is it woth to give up my Thief (i played him for 3hrs) to make a deprived?

Im pretty new and dont know any kinds of build ^^ but i have seen some player choosing deprived and making a awesome damage build

In my opinion....... No it makes it more difficult on yourself starting as a knight or in your case thief already has some invested points into stats like Dex and vigor deprived deprives you of that. It's only good if you want full control having no points to spare like if your making a dope pvp build in the overall game its more challenging for the same reward

It comes down to what you want specificly, but if you want to casualy play the game it shouldn't be a big deal.
I mean the thief isnt that old and I nearly just skilled only vitality and im at lvl 26.
I also think that for thief it isnt necessary to skill only vit.

It is one if not the best class for low level builds due to the fastes among all vig-stacking. by sl 18 you can have 27 vig.

Other than that knight will be optimal for majority of high level builds and close to optimal for almost any, but not for all.

Depends sometimes low lv builds are better deprived but useualy kight or warrior are the best statwise -> warrior pure str no magic --> knight everything else.

If this is your first playthrough, I´d say go for it and don´t worry too much about your build or SL (you can change your stat allocation later). It´ll make the start of the game a little bit more challenging, that´s all.

Choosing the right class becomes important only when you have a very specific build and SL in mind.

Deprived is if you want to go for a built that's super spread out, you have better point efficiencywith most things, but pyro is stil best pyro, high vit build favors knight, high int/fatih builds favor scorcerer/cleric. Deprived is like if you want to have everything but not be good or bad at any of it. also if you want a luck buld go cleric apperently. 13 luck for some reason.

unless you are one who will use luck as a stat it is in my opinion useless so i would start out as a knight or a pyromancer since they each have 7 luck end game the few extra stat points make a difference
Deprived ain't what it used to be, so this is not the case in ds3.

To begin with, the class here starts very able to steamroll through tutorial, including the lizard.

But the worst is that it has all stats at 10. This is not the lowest you can go, so focused builds benefit, give or take 5 extra stats to play with, as already pointed out by others

Edit: I would think it's only viable if you want to have a toon that will be changing builds drastically
