Corvian Knights
I can barely handle on of those, but there are two in the church. I'm using sellsword twinblades. Is there anything better for a pure dex? Seems like it's the best from all the research I've done after realizing that washing pole won't cut it (no pun intended) and that I'm just a weeb katana ♥♥♥♥♥♥. I'm thinking of redoing the game with a different build (ran out of rebirths). Dex seems to suck in pve.

You didn't use the rosaria glitch for endless respec?

I'd highly suggest it if you're trying out a new build next time

First : learn to parry. You're a dex build who will be getting parried a lot so learning how will help a lot. Plus its good against the corvians.

Second: I did a full sl60 run purely on dex. It is definitely viable.

Third: infuse the astora with a sharp gem (ironically farmed by the corvian knights). Its the one UGS a dex build can really use and it is an absolute beast at times. Also sellswords are highly overrated. Sharp gotthards, warden twinblades, crow quills (once you learn to use them), lothric knight ss infused with sharp (bc of course), and marakumo. Marakumo is probably fav dex weapon in both PvP and pve settings.

Don't give up. Figure out what you can do differently and adapt according to the enemy. I highly recommend learning to parry the corvians. Or just squish them with the astora. Up to you.

Edit: typos.

I've spent first 30 minutes of ds3 attempting to parry attacks with a target shield. Never got consistent in it. Guess I'll try it again with corvians and washing blade now. Will check out your recommendations. Will have to buy titinite chunks for that.

Iron round shield or similar is bae for parrying. Or caestus. The bucklers and targe actually have a longer time before active parry frames. Gotta watch for when the swipe actually happens and time It accordingly.

Corvian Knights have a big weakness: Alluring Skulls. This may help you when you are fighting two of them.
And for casters: Rapport is the way to cheese them.

I've beaten the ashes of ariandel! Tried murakumo cause it's the only one on your list I have in my inventory. It's great, thanks. I just stagger-locked them both at the same time. I tried parrying with the WP and it's difficult to riposte 4 times and survive.
Never used any greatswords in dark souls, cause I've always thought they look ridicolous. Turns out I was missing out a lot.
So should I invest in strength to one hand it and get a shield in the left hand to block, parry and ♥♥♥♥?

No problem. You can parry with the Marakumo WA? News to me. Guess I'll have to try it. I usually just use a shield or caestus.

That's not a bad idea. Not much STR as you don't want to out level your build (if you choose to pvp, anyways), but some so that you can use different weapons. Some dex weapons (Great Scythe, for example) require some amount of STR (usually 16-18).

Better suggestion (depending on where your STR is now) is that you can also use a Knight's Ring to compensate for 5 levels if you need to, and only have a couple of STR required weapons. This will allow you to ring swap when needed, without having to sacrifice the 5 levels that could be put into something else.

Though, I would at least get enough STR to 1 hand the Murakumo without the ring. Once it's infused with Sharp, I'm pretty sure the requirements go down, so keep that in mind.

*By WP I meant washing pole, not weapon art. I already have it +10 sharp, they don't go down, unfortunately. I'll go for 15 str for now then. It seems I need 14 to 2 hand it without knight's ring anyway. I don't plan on going for a new game+ anytime soon. I still plan to do another character eventually. For now, I have the ringed city to beat. Maybe practice pvp in arena, cause I've gotten fatally (riposte btw) invaded halfway to the earthen peak ruins bonfire just now.

I was in a rush and misread that, my bad. Washing pole can be pretty easy to create predictable patterns. Lot of people use the running attack, and if you do that against someone with their parry-shield ready, you're asking for a riposte. That weapon was the bane of people's existence for a while, so we've (by that I mean, pvp players who have been in it a long time) gotten used to a lot of strats that are used with it.

I'm always down to help a person practice. Add me, and we'll have to duel or do something later. I could maybe even drop you a spare dex weapon or two.

Ok. Maybe later. I still should get the souls for 15 str first.
