I tried this guide and it worked well for me

Alright, most of the time i use a normal shield and focus first on the more aggresive since its just a matter of avoiding the toxic of the other one. Also buy stuff to cure toxic.
Estus ring is very useful for this fight. Other that that, you gotta learn the moveset, is not very good to always keep lock on 1 target since you cannot see what the other will do try to attack on free camera.
I summon both NPCs and tell them, their task is to kill the Demon in Pain together.
After the drop down the Demon from Below will focus on me, I roll back, back, back, to lure him away and seperate the 2 demons.
The NPCs will come a few seconds later, and with some luck they both will land near the Demon in Pain and fight him. In case one NPC follows me to the Below, I need to run to the other demon, to be able to kill the Demon in Pain first.
If we do well, both NPCs will survive the first stage. ( on any ng+++++)
In second stage Gael will die fast, but Lapp should stay alive long time and tank a lot.
My most favorite strategy is to cast Dorhy's Gnawing in second stage. Without the faith for it, I use the Bandit's Knife too.
That all is for low level chars, they can't wield Black Knight weapons. But the Bleed method works for high level chars too.
And before every difficult boss fight, I cast one Tears of Denial. Can cast it at the bonefire, so long as I have 10 faith and use the right rings. Then sit at bonfire and unequip the spell. = one free death.
When you drop down, the Demon from Below is on left side and will focus on you. The Demon in Pain is right side and starts with spitting poison.
