The guys at the elevator? Run ahead a bit and anticipate them. Keep your spacing far enough away that when they attack, they miss but are close enough for you to counter. And try using your widest range weapon to stagger / kill them in a group. If you have the claymore, one hand it, as it has a good wide range and a quick startup. If not use what you have in the set up that widens its range (eg one handed longsword is wider than two handed).

Try to solo what you can, man. We need more capable players in the community, and the game is easier than it seems - you just have some growing pains in the beginning. Once you learn the patterns, and most of the mechanics, it becomes a simple game of chess mixed with rock paper scissors. I don't know if that analogy really fits but the point is that it can be fairly simple once you get the hang of things.

I'm going to try my hardest to solo him, but that beam attack is the worst. Drink an estus, boom ready to go, oh wait nope I got hit by an energy beam.
Absolutely every demon mini/boss in DS3 can be easily cheesed with a bow.
just pay attention to its second phase attacks, you may be 1shot or staggered to death.
Pontiff u dont need to parry anything, it is not "required" by any means (no boss have a parry requirement).
If you manage to stay far enough and keep distance untill the last hit of his combo, you can land hits on Pontiff without even dodging.
Just bring a shield for safety and that is it.
If you are good at dodging, you can also do it.
If you are not, you can bring a heavy armor, heavy shield, stay far and block just the last attack, hit, step away and let your stamina recover, just repeat untill it is dead.
(ah yeah, notice Pontiff have a shadown that perform his next moves before him. I know the shadow also hit you but you can know exactly what the Pontiff will do before he does and when the combo will end).

Also, why would I run away from Aldritch when I can avoid being hit by just staying behind her? I've only been hit by her melee like twice, and that's when I messed up getting behind.

About parry.
I finished the game some 5 times, never used parry (like, literally, never) on any boss and I am still terrible at parry even against normal enemies (ok, not "terrible" but I still miss a lot and every enemy attack have its own timming for parry, not something I would like to spend time learning) and, if instead of dodging the last moment I would parry (also it is not all enemies you can parry neither all bosses you can parry . . and the bosses you can parry it is not all attacks you can parry) . . . I dont like the mechanic, instead I prefer to get behind and backstab instead of parry.
I mentioned the other ways of killing Pontiff as you mentioned "the fact that parrying was basically required" when it is not required at all.
