Playing with help, knowing everything from wiki and other players advises and not being your first souls game, DS3 is like 10 out of 100 or "watch" out of 100, where the helper may do alll the work while you just sit and watch. (the worst experience, will kill your first solo experience, considering you try solo after beating the game with help, and will also kill all the exploration part of the game).
I was actually talking to the OP and the last comment for me by the time I was typing this was from another user, True Survivor. Personally, I didn't struggled at Gundyr, got him on my first try by just sticking close to him and circling around and attacking once in a while, I had picked a Knight, though, that's why it was easier for me, I also had a lot of experience coming from the original DS2 and Bloodborne, so, I kinda knew what I was getting in to with DS3. Difficulty wise by enemies, I really can't say much, but I had more struggles in DS2/DS2SotFS and in DS1/DSR than I ever had in DS3. I think at some point it comes down to personal experience and understanding, so, no matter what we say to the OP, they will have to see for themselves.

It's because I've played Sekiro first so, DS3 was relatively way easier.
Me, I really like chaos style combat with BLoodborne being my number one of all time. So dks3 feels like a 50ish~ below for me.
Even if you have poor reflexes and a hard time with patterns, you can just do the maths to get a crazy overpowered build going and stomp everything anyways
Now as for the cancer, that depends on if you use miracle builds
