As Knigth I really like to wear spadon and a straight sword
In pvp there are a handful of really good weapons that you can call meta weapons, but it doesnt matter alot imo if a weapon is considered S-Tier or A-Tier. In the end it is a matter of the wielders skill.
Like the others already mentioned your starting class isnt important since you can level what you want and make whatever build you want.
The classes don't mean much. You can always respect the stats into something else, the difference is what stats they have predisposition to. For example, the Knight class lacks inteligence, faith and luck (especially luck) which discourages build which require them, but not by a lot. On the other hand, for example he has 12 dexterity, so using something that requires less than 12 dexterity to weild and doesn't need it to deal damage (literally any axe or mace) is a waste because you have a couple of stats in dex that you don't need and could use somewhere else.
Its not super important though, its just something min-maxers worry about.
In other words if you picked to play a knight and want to become a mage - not a problem, just level that INT and you're good to go.
As for a general theme of knights... Lothric Knight Straight Sword which can be farmed early into the game from Lothric Knight that weild it (big fellas with red capes) is one of the best straight swords in the game, its just extremely well rounded and can do anything.
You'll start getting access to more and more weapons as you progress, the key is finding out what do you want.
Do you want to focus on speed and ability to have control over the flow of fight? Straight, curved and thrusting sword, as well as katanas, axes and maces are your answer. The difference is what stats do they need to deal the most damage.
Do you want tactical engagements with keeping your distance and ability to punish the opponent? Spears are the tool for the job.
Do you want godlen middle between speed and raw damage? Greatswords.
Do you want just pure raw power? Ultra class weapons are a way to go. Like Zweihaander, access to which you can gain fairly early.
