Best starting class for a melee/sorcery build?
I want a build that has a good melee and can also use many spells.

Pyro? Other than that the pickings feel slim for being decent in both off the hop.

I'd suggest you use either soulsplanner or mugenmonkey, I like soulsplanner a good bit more. Put in your stats and click the button that tells you the best starting class.

That's one of the things that's different about Ds games from other games. Starting class doesn't mean much unless you're self-capping your level. Everything is available to all classes. If you're going to be investing in a wide variety of stats like str/dex/int and faith knight and pyro are both relatively efficient compared to the other classes.

The other thing to consider though is the experience early game. Sorcery doesn't really start taking off until mid game and can be a hard class to start with as well as being inefficient for a lot of builds. Very good pyromacies are available earlier, and knight is arguably the easiest class to start with.

This. I would recommend just going Knight at the start, Deprived if you can manage to get far enough to get a real weapon. You have no access to any real spell options until you reach the swamps so you have a buffer of approximately the first 30 levels and first few areas before magic starts becoming particularly relevant. At that point you will have the pyro NPC, the sorcery NPC, and the Faith NPC along with some tomes/scroll books acquired around that point in time as well. In addition, your Estus/Ashen will start to shape up compared to early on you will be very limited on Ashen or Estus and how much it heals.

My mage is SL133. Deprived.

VGR 35 (40)
ATT 24
END 30 (35)
VIT 13 (18)
STR 20
DEX 18
INT 60
FTH 12
LCK 10

Prisoner´s Chain, Sage Ring and both magic boosting ring (forgot the names), magic ears (I forgot the name too).

Main loadout:

RH: Moonlight GS, Crystal Dagger
LH: Sacred Bloom Shield, Court Sorcerer Staff.

I won´t tell you my armor, because I can´t remember everything, but I have around 21 poise, which is enough to poise through small weapons.

I can hardswap rings to go from a caster to melee (with 30ish poise) and use a good amount of weapons (including some UGS and the Murakumo). I have 4 spells, which is enough for me.

IIRC, Mercenary would be better for this build (3 extra points).

Pick the starting class that minimizes your wasted points. Don't want Luck? Pick Pyro or Knight. Find the class that minimizes whatever stat you want the least, then play it how you really want.

here's my build
Knight class SL 99
60 INT. put the rest to vigor and endurance.
main weapon: Moonlight GS
secondary: Crystal Longsword
have to use ring: magic clutch and ring fap
.
now on early game, dont spend on INT. instead, get the meta build STR or dex. when you reach SL 99 or 120. respec at Rosaria.

Use a character builder, plot the stats you want and let the tool recommend the class that gets there the fastest (i.e. lowest SL).

No, better level as the build you want unless you want to be a SL99 or 120 total stranger to your own abilities.

its because INT weapons on early game are non existent, crystal gem is also can be found mid or late game, there's some early spell but its weak.
its best to just stick to the basic build until you reach certain higher lvl and get all items and equipment you need for the build.
