Also you can check the AR (attack rating) in the stats menu at the bottom middle panel. The top number will be your first weapon equipped.
Then just calculate the difference.
Keep in mind that splitting damage types into for example physical and fire will basically always lead to a higher total attack rating, but since another defense comes into play the gap is not as big as it seems.
The weapon was the Uchikatana & I switched from fire to sharp infusion - stupid?
No, even at 22 dex sharp infusion outperforms raw on the Uchi, and your weapon will get better as you put more into dex. You can apply resins for when fire is useful and still get more damage than with the fire infusion. If you're sure you''re going to focus on dex you might want to consider re-allocating what you've put into strength to Dex, keeping just enough str for the minimmum requirements for your weapon.
If you want to focus on dex weapons then I'd say to not put any more into strength, you won't need it.
Also infusing it sharp was the right idea. When you increase your dex stat you'll see your damage go up a good bit. You can also use things like straight swords, rapiers, curved swords, great curved swords and stuff sharp infused. I'd say to mostly avoid greathammers, great axes and most ultra greatswords. They're more for strength or refined builds.
If you do want to use an ultra greatsword, then I'd recommend the astora greatsword.
I checked the attack in my stats & my sharp infused Astora Greatsword+4 is my best weapon in terms of damage. I use the Katana until I learn to manage my stamina better
They do scale with strength, but if you infuse them with sharp then their strength scaling will be reduced and the dex scaling will be increased.
So on dex build most of your weapons will get very little damage from having more strength, that's why people normally go for 16 to 20 at most.
The straghtswords like longsword and LKSS scale evenly with str and dex until you put an infusion on them. The LKSS for example is a beast with a dex build, it gets S scaling off of dex with a sharp infusion. Same with the Astora... that thing scales so well off of dex that I put a sharp infusion on it even for my 40str/40dex build.
Can I do it after a specific point so as to not ruin that questline?
You can join the covenant and repec without breaking Sirris questline. It only breaks it if you give Rosaria tongues for the covenant.
Though if you're still concerned you can just wait until you reach the Twin Princes, after that point her questline is finished.
You could just wait if you want, you'll only lose out on a few points of damage since your strength isn't too high.
