either with sheer damage or bait him to let you parry him.
you can however "cheese" him should you want that, youtube and search for cheese for the figth.
I hit him for 47dmg with my sword.... pyro hits for 170....

♥♥♥♥ sake: once i get rid of the wolfes there is no frigginf way im gettinghim down with pyros... WAY do dogy and my the time i've spent all my flasks he basically got 50% hp left.
Trying to melee him just makes him 1shot me with a nice stab in the front...
After entering the boss arena throw alluring skulls to distract the wolfes for easier kills.
Try bleed damage for the boss fight, per ex. Flamberge and carthus rouge.
Try great combustion, when he dodges your ranged attacks.
Being but an NPC and the fact that he uses his shield quiet often - he's very suspectable to shield breaks and ripostes. Parrying and breaking his guard with straight swords (or follower's) is a good way to deal damage to him.
Considering that the wolf appears when he has below 50% health or something like that (maybe 60?) its highly reccomended to attempt to get him below that health with a crit, as to give yourseslf a boost in phase 2.
Then just finish the bastard while trying to avoid the wolf and then fight the wolf 1 on 1.

Parry the ♥♥♥♥ out of him.
Use Dorhy's gnawing. They're both weak to bleed.
This. When I did this boss as a pyro I figured it would be the easiest. But gravetender made it a pain to cast against him.
I went around the side, used CBV against the two wolves there, kills one and catches the other with its edges to nearly kill him. Used melee, black flame and aggression against gravetender. (I was using the follower's sabre) Then the wolf is easy for a pyro when it's just him.
Just spam him with black flame. He blocks as he attacks, so if you hit him with black flame it should always guard break him, allowing you to get a chaos dagger riposte.
Mind sharing your stats, weapon and infusions?
Also remember that you can parry him.
Just go for 1 light attack each time you have an opening if you are not confident in your dodge or parry skills
