For other mob enemies, while almost all are not weak to magic they are also not resist to it. Plus, you can use fire instead.
Midir; just use pestilent mist, stay close, dodge and back off, rinse and repeat. Although his 2nd phase requires more caution, i think pestilent mist is the easiest way to fight him especially in late game e.g. ng+7. Summons are recommended to pull aggro and better if they have another pestilent mist.
Spear of the Church; the usual pvp stuff lol
Gael; this ♥♥♥♥♥ is the hardest in late game because of high pool of hp, and his swiftness. If you are pure int build, my best bet is to use snap freeze with whitetree branch if u don't use sage ring, reset frostbite proc with fire and repeat. Use toxic mist or storyteller staff (best buildup rate) to inflict poison. Gael weaks to both frostbite and poison. Summons are recommended. I find using normal damaging spells are tougher and drain fp fast, unless its lower ng++ i think the latter is easier to do than the former.

p/s: Yes i hate ringed city too but the bosses are fun and challenging for mage users :D
