High faith miracle build has been a blast. It's still my most used character when people need help clearing areas or boss stomping.
Also there's nothing quite like blocking every attack from the Nameless King, both phases, with the Dragonslayer armor's greatshield which has 95% lightning block
EDIT: Whoops! Just noticed the "most fun and EFFECTIVE". I guess this isn't really an effective build lol more like a fun/themed challenge run.
go with composite for fast attacks and millwood for strong one
or try pyro with rapport, is pretty fun too

mr salve build (slave knight gale)
pyromancy build
and my fav build..... the non build, just pump all those ♥♥♥♥♥♥♥ souls and lvl up to max so you can use everything effectively. BUT, youll get one or 2 shot by almost everyone cos apparentally some ♥♥♥♥♥♥♥ in the dev team thought its a good idea to scale enemy difficulty to your lvl. so you can never be op. so whats the point to leveling
nothing is more intense then having to worry about running out of consumables mid boss fight, but every boss can be beaten like this*
*except technically gundyr... i mean you can still beat him with all your attack binds removed, but pure consumables is not possible.
Edit: Suggest warrior as starting class, though honestly any class can work.
