Actually it's this:
if you are going to use it mainly one-handed then sharp is the best shoice for you
but if you are going two-handed with 40/40 quality then refined will give SLIGHTLY more damage.

I use this two-handed with a strength build, heavy gem infusion. Fits nicely with my other stats and didn't need to put too many points in dex.

40 of any stat always hits a soft-cap so it wont gain much.
But i dont know honestly. All i know that two-handing 40/40 refined will deal slightly more damage. Never tried going sharp above 40, leveling up strength will probably be more effective.

Indeed, if you choose Strength, level that single stat to 60 to get the most damage benefit then distribute your remaining stats; requires 16 for Dexterity, only get as much Vitality as required not to fat roll, Endurance and Vigor as possible for PvP. If your starting class has 10 in each Intelligence, Faith and Attunement this will also allow you to use the Carthus Flame Arc and Magic Weapon buffs.

40/40 outdamage almost all other physical infusions.

In Dex for example 60 Dex sharp only beats 40/40 refined when you are using Claws or Chaos blade.(Chaos blade its special anyway blergh)
