I also recommend the pyromancer starting class, if nothing else just because it makes the early game a breeze.
But if i had to pick up between claric and mage, what would you say its better?.
Also, i still have big doubts with a melee weapon for this !
As for a weapon, something that scales with intelligence or faith would be good for a pyro. Onyx Blade has decent damage but a bad moveset, Wolnirs Holy Sword is fun to use but can't be infused. I'd say either Astora Greatsword or Saints Bident, as both can be infused and buffed and both have some faith scaling.

For PvE, I'd say sorcerers are better. Clerics are certainly powerful, but the early-game is starved of cleric equipment and some of the really good miracles can't be gotten until near the end of a NG cycle. You don't get a single faith-scaling weapon until the Cathedral (and that's more of a dex-fth weapon than a pure cleric weapon) unless you consider a blessed small shield a "weapon", and you don't get a single offensive miracle until you get to Farron Keep (which will deal meager damage and suck up tons of FP). You don't even get a dedicated damage infusion until 2/3rds through the base game; the Blessed infusion isn't much more than support on every weapon except the Lothric Knight Greatsword. Unless you kill Dancer early for the Sunlight Straight Sword or deal with the Dark Hand (technically a pyro weapon, but at least your damage will increase if you put points in Faith), Clerics spend half the game waffling about as a bad melee class with healing spells that are worse than the chime weapon art.
Mages, for all the problems they have, at least get damaging spells early on and get their damage infusion at Farron Keep like the melee classes. They also have a non-elemental spell (Pestilent Mist) that lets them deal with even the magic resistant bosses in the Ringed City. Pyro is even better since they get a lot of their really good spells halfway through the game while mages are starved of crystal sorceries until the base game is almost over.
Most of my builds are PVP focused and I can comfortably say sorcery absolutely reks in this game. Especially if you love invading, with all the chaos going on I use hidden body and one shot people with crystal soul spears. The damage to FP cost ratio is best with sorcery imo when all Sorcery boosting gear is on.
Miracles was definitely a fun playthrough because a lot of the highest damage output you can get is via miracle buffs like sacred oath and lightning blade.
The one thing I like about Pyros is you can infuse your weapon with a dark gem and I've noticed not a lot of people have high dark defense. The only two pyros I ever used was CBV and that black flame to people's faces.
Just use support spells of sorcery its enough .
Miracles are very flexible for a number of builds, enhanced even further by generally effective miracles (Blessed Weapon and heals), and Str/Fth builds have a number of weapons that go well with that build (Saint's Bident and all the big hammer weapons)
Sorcerers seem to be the weakest this time around sadly, but hey there's a lot of cool Int weapons to use so it's worth going that for that alone I think
Yeah some enemies are just extremely resistant to fire. There are a handful of dark pyromancies though but given that as a pyro you will be levelling INT and FAI, you should have a good substitute to draw from.
I know some people swear by Black Serpent but that thing hits nothing nimble
