2. The souls are used for everything here. You level up using souls, buy stuff using souls and upgrade equipment using souls. You can levels up after defateing the first boss and Reaching the shrine.
3. I usually use alt+tab to change windows and that applies to every appication out there. To quit use you menu and quit the game using the far left tab when you press start or options. After that you are taken to the main menu where you can quit the whole game there.
1.) I find the best way to defeat the tutorial boss in the area is to stay by his feat and slash away when i can no more than 2 attacks in succession though or you risk running out of stamina. When he is changing to 2nd form get behind him and then try to stay behind him at his feet and slash away but watch out for powerful attacks. If your not sure just keep rolling away, heal if need but stay cautious he will try to attack you.
2.) When you die you need to pick the souls up again, when you get past the first boss of Gundyr then you get to firelink shrine. The fire keeper is the person that levels you up. You talk to her and you spend souls to level up with her not the bonfire. So make sure to keep your souls safe and give them to her to level up.
3.) Ok this depends slightly on your settings. To close the game click escape this will open up the options bar with inventory, equipment, status, messages and system. Go to system. Then once clicked on system go to the far option at the top which is a picture of a door with a arrow going into it. Hover over that option and below it will show your character, level, time and also a "Quit Game" button. This is how you level the game to get back to the main menu once there scroll down the list to "Leave Game". To move between windows I use Alt+Tab to go between the game and my windows screen however this may not work for you so I am not sure for what would work for you but you can try Alt+Tab at the same time.

3. Not really anything you can do besides make the game window mode in the options. Oh, and when you quit to main menu scroll down. There will be the option to exit the game.

Some players find it easier not to lock some find it easier to lock im for the latter but it depends on the enemy, roll behind him or to his side or infront, lock, get your hits in, unlock, roll away. Alternately same thing but dont without locking, the locking just insures that you wont miss your swings (and usualy that your camera wont be facing an awkward angle)
Think of the first boss as the lube preparing you for the butt sadomizing you're about to recieve throughout the entire game.
It's the easiest enemy to parry.
Even easier than Lothric knight.
Many people play with sword & board. While it may be good for the Tutorial Boss, later enemies will require you to develop other methods for damage prevention.
Learning to time rolls is more important imho.
Also: Do not rush the fight. During my first 2 playthroughs my mind went into "oh my god oh my god oh my god - he is hitting me - i have to kill him - fast - aaaaaaaaah". Later I learned to go into fights a lot more relaxed and bide my time for the right attack.
Once the panic wears off you realize, that the fights are actually quite slow paced. Attack Patterns follow a rhythm (turn on the ingame music for clues) and are (usually) followed by a short break which allows you to get 1, 2 or sometimes even 3 hits in.
Do not get greedy. It is better to hit the boss 1 time without taking damage yourself, then hitting him 3 times in exchange for 80% of your health bar. You can often see people burn through all their estus during one boss fight - and die while trying to "quaff a potion". No need to heal if you didn't get hit.
Go watch some 0-hit runs on youtube for guidance, it is a good investment.
