As someone who has farmed these guys for literally 5 hours to get 30 proofs, just use anything that's a Greatsword or heavier, and wail on 'em. Most good, upgraded weapons can kill them in 3 or 4 hits.
If only I could somehow parry the spear dude.
This so far has been the best method, but I still cant kill him before the sword dude gets down here. I wind up burning like 3 estus before I get to aldritch's room, I want to get to his room with all my estus though, but these guys are super close to the bonfire.
You can parry the spear knight pretty easily during his long range dash wind up but it may take some practice, luckily its right next to a bonfire. ;p
I second the method suggested by Skeleton and since you have had some success with that suggest you continue that method. When he charges down the stairs move as far back to the edge where the elevator would connect to as possible and just keep dodging if you do not kill the spear knight before the other reaches bottom. He will not walk close enough to the edge so long as you remain relatively close that that area and will turn around to return up the stairs leaving you to finish the spear knight. If you get confident enough about handling the spear knight 1v1 you can keep fighting instead of dodging near the ledge while using this method. You can also use Hidden Body + Dragoncrest Ring to make it very easy to fight them while invisible without aggroing the other. Use Scholar Ring if you need more Int, and use the Bellowing ring or w/e to boost duration if you need.
He only chases if you gain aggro in the first place. If you use the charge lure method to pull the other one away first then move to the ledge then the sword wielding knight will only walk to the base of the stairs and turn around for his normal route thus never getting close enough to gain aggro at all. In order to make this work you must pull the spear knight away and the method you used/as suggested earlier is ideal for this.
The silver knights will not follow you onto the elevator, they can't. I've tried, they get stuck at an invisible wall just before the elevator platform. Hence my previous suggestion...
