A lot of people use the Drakeblood Knight right after the Ancient Wyvern fight in Archdragon Peak.

i used Drang knights as punching bag before
they have health like normal players
super low damage

until i accidentally killed them

Idk if it's worth it but a lot of people use the firekeeper as a punching bag. Idk if her hp scales up with you or what but she does respawn so it's not a big deal if you "kill" her.

The firekeeper has zero resistances, so if you use her for damage testing just cut your damage in half or so. half or take a quarter off. As someone said earlier, the drakeblood knights are pretty good.

Maybe the spider in Anor Londo? There's an invisible wall that it can't pass by the elevator.

Any bosses you can test it on then?

Not really, since you'll also get a ton of souls if you use Halflight, and then just respawn him
