I want to beat Dancer early.

The same way everyone else does. Get a Dark weapon or some max health, go nuts. It's not impossible.

Dancer's vulnerable to Dark damage. If you can kill/pacify the mimic in High Wall for the Deep Battle Axe or purchase a Dark Hand from Yuria early, you can certainly deal enough damage to beat the Dancer, as long as you stay alive.

Get that deep battle axe, summon 3 phantoms with a dried finger, and gank spank the dancer.

How most people would fight dancer later?

Ask on forums for assistance with the boss (several of us have very low level or SL1 characters and experience beating Dancer at SL1). Darkhand, Deep Battle Axe, or bleed like Bandit Knife.
