P.s. Some helpful tips though for you, girls.
Invasion is restricted by weapon enchancements and level range. You cannot be invaded by someone much higher/lower than you in levels, same with weapons, if you have +0 weapons, generally people with +3 weapons and such cannot invade.
So if you don't enchant your weapons, or dont level up, soon enough you will not face any invaders at all. Another suggestion is, ask someone to get you lots of souls, and level up A LOT. Say, get to SL 200 by leveling, for example, luck and faith to 99 (if you dont use it). You will not get MUCH tougher than an average lvl 30 guy in terms of power, but you will face little to none invaders. Hell, i can even help you with them souls, since you are two, wont be a problem for you to get any soul level you want. Playing on SL 200 with +0 weapons will GUARANTEE nobody is going to invade you.
As for your problem:
^this is actually possible. What you should do is not to upgrade your weapon (or at least later on keep it way below the normal range, never go above +6 or even +5).
If you stay at weapon upgrade way low comparing to your level - none would invade you, you will have as you wanterd roughly half dps and you can play together in peace.
Edit: looks like while I was typing the answer was already given to you^/..
Damage output and stats are reduced to match Host if you summon someone with a password, say a SL25 guy summons SL120 friend to help him kill Dancer early - this way SL120 guy will have his stats and weapon damage greately reduced.
If we talk about invasions, stats and damage outputs are not reduced, and having +3 rings is just ignored, gear is not taken into any concideration. Set of +3 rings makes you twice as strong as a guy with no rings.
There is a fun fact: deprived class can leave the shrine for the 1st time to the high wall being sl 16 with 25 vit without any soul farming, just clear the area and sell a couple of embers you can pick there. All one has to do after that is rush those broadsword and make it raw +2, takes few min -> done.
That is around 1270 hp and 180 ar on a fast hitting weapon (or around so), no invader will have health anywhere close to that at that level, so even if their dps is slightly higher they will lose in health*dps coefficient.
+statistically invaders are much lower level which is extremely visible at low sl.
Now the real advantage they might have is the estus, that actually make a difference, but here is another fun fact: new chat that only entered the high wall can not get invaded untill he summons a phantom, use dry fingures, invade himself or do some other online interaction. So in any case the host does not have to get invaded before getting phantoms or the way of blue which compensates for the lower estus amount.

Hp from 993 to 1435 (+45%)
Stamina from 100 to 123 (+23%)
Physical Protection from 100% to 105% + Absorption, up to +10(+15) %
If you think this will be a fair fight you win only because the loser has to git gud, you're an ♥♥♥♥♥♥♥, sorry.
At sl 25 invader would on average (even excluding the game bias) be invading sl 35, so you need to compare to that.
Also, ember+starting life ring = +40% hp.
So you are unfamiliar with the game i see. Okay, let me explain. When you get hit, there is no chance you will die. You do take damage, and its not chance-based. The ammount of damage you take depends on enemy attack and your defence. Damage taken reduces your health and if it is reduced to 0 or below - you die. It is not chance based, either. You will lose hp when you take damage and when it gets to 0 you will die (or proc tears), and then die. Hope now it will be easier for you to compare damage and hp.
As to the " If your enemy is stronger then you have less chances to get it." - this as a whole makes no sense. When my opponent is stronger, my chances of getting hit are in fact higher, of course, not lower. But perhaps you are also unfamiliar with english language and you just cannot explain yourself.
