Black Knight Greatsword has good damage, it weighs a lot, has plenty of Hyper Armour even when low on Poise, good Strength Scaling... the Weapon Art is pretty useless.
Butcher's Knife is faster, but obviously has less range and damage. It's very good at roll catching however.
Typically the bigger and heavier a weapon is, the more hyper armour you get (to counter-balance the slower speed of its swings).
Poise (a value every armour piece has) affects Hyper Armour. The more Poise you have, the more Poise Damage (a hidden value every weapon has) you can sustain before being interrupted during Hyper Armour frames.
In short, it lets you hit without being staggered.
