New to Dark Souls, how come I can't wield my stronger weapons?

I've been upgrading my vitality a lot, yet I'm not able to use any of my stronger weapons yet. I've been stuck using a Rapier

Look at weapon requirement Str, Dex, Int, Fth. If it is red you do not meet the requirement so level that stat to the stated requirement. In the case of Str if you 2-hand the weapon the value is increased by 50% artificially (will not show in stat screen but red X at bottom left will vanish and ur Attack Rating will go up to correct value). Example: 20 Str when 2-handing = 30 Str.

Yeah. See: http://darksouls3.wiki.fextralife.com/Stats for more info on what each stat does. Vitality is for weight so you can still roll fast with heavier equipment. If you feel you screwed up your stats at some point Rosaria (not very far in, is at Cathedral of Deep) can let you reset them 5x per NG (game has NG+s).

Dark Souls has a lot of little things like this that are super obvious to those who are familiar with the games, but I remember strugling to figure all of this out back in Demon's souls :)

As my first Souls game I agree. So much hidden/not obvious information I had to look up to better understand certain mechanics/features. Thankfully wiki got at least partially setup pretty fast at release.

its was especially difficult to figure out what all the stats did back then when some of them were entirely broken. (looking at you resistance)

I remember when I first saw a screenshot of the level up screen. My mind was blown at everything on it. Now I can read it all and I think "what have I done with my life"
