Why is everyone so big?
Artorias,Ornstein,Abyss watchers,lothric knigths,black/silver knights,cristal sage,pontyiff...

why are they so tall?

I ended up the game at level 90 and I was the same size so it can't be for the souls

Its a japanese thing, Powerfull characters are often portrayed bigger than normal humans to emphasize that the character is "larger than life" and "very strong"

I'm pretty sure that in DS lore the stronger your soul is the bigger you are, explaining why most bosses are huge since they have really strong souls, and can be turned into weapons and stuff.

It is true that npcs got bigger in DS3, though i can't remember DS2.

I think they're a race of 'lords' or something similar - the same species as Gwyn and his family.

They are bigger because they are not humans, in the game, there is no mention about races, but the characters you mentioned are all non-human. Hawkwood is human, and while he is an Abyss Watcher, he is still small. Their size is not based on their souls power, for example: Havel is way stronger than most of these characters, yet his human sized. But being human sized wont make a character human, for example Ciaran is human size, but we know that she is not a human.

Our characters are descendants/creation? of the Pygmy, the enemies you face are not.

It´s an aestethic choice, pure and simple. Take Artorias fer an example, it would have been far less memorable, interesting and beautiful if Artorias had been just another npc with some fancy moves.

It is just the way to make boss looks like boss. It's not about Japan. Look at bosses on WoW. Normal humans r giants when they r raid bosses.

Lore reason for enemies' size:

The size of bosses is a metaphor to thier status and power. I am not sure if it counts, lore wise, to other mobs. After all, this is a game and killing larger enemies then You is more satisfying. Imagine killing blackknight that is a half of the size of your character.

Lorewise, many enemies belong to the race of gods, who were led by Gwyn.
