The big dog things down the long ladder after a hidden wall.
just as easy as that, really. i belive they also have a weakness to either lightning or fire...i can't remember...
A chaos bed vestiges will stagger them instantly, or you need 2 of those. So it makes the whole fight pretty easy.
If you wanna cheese them try poisoning and wait in the ladder.

Edit: saw that Lweed posted the wiki link. I'll just reinforce it in agreement with my experience with them.
Tactics when dealing with the Beasts in Reserve:
1.) Lure out the one on the left first (from where you come down the ladder). Buff your weapon with either Charcoal or Carthus resin (it's very weak to Bleed, and Fire), and play defensively. Just dodge to the side when it charges, and punish its flank.
2.) Another tactic, is to equip CFO on a Pyro Flame, and spam it at the same Sulyvahn's Beast (weak to Fire, and breaks Poise very quickly). Just remember to roll to the side when it inevitably charges.
3.) Yet ANOTHER tactic is to cheese it out via poison darts/arrows (you can buy Poison Arrows from Patches at Firelink Shrine). This final method is possibly the easiest, and laziest way. However, it does take time.
Addendum: High poise-damage weapons/abilities that hit its head (Greatbows for example), will break it's poise/hyperarmor. 'Causing it to stagger, and you can riposte it for an easy kill.
edit: or maybe they get staggered easily by kukris in the face? I can't remember.
You need to keep distance and focus on hitting their heads and jabbing them with dashing attacks when you can. Disengage liberally, they're really good at covering their sides and back.
