Especially the shield-weilding ones.
if you have trouble with them - find yourself a straight sword with a stance and guard-break their shield time to time, but do it quickly since they will go on offense pretty fast.
Millwood knights have delayed telegraphed attacks but they also have decent poise.
Theoretically you can stun-lock them with big weapons, but i'm yet to try.
If you practice enough you can learn to cicle around them for backstabs.
I find the ones with the great hammer harder to bring down, those freaks hit like a truck and have endless stamina.
