Twin princes allows you to make a straightsword and an ultra great sword. If you go to NG+ you can get two souls of twin princes and make both weapons. You can then fuse both weapon, with ludleth, to make a greatsword that has the weapon art of both previous weapons. It's really good.
Transposing rosaria soul gives you a spell and doesn't affect your game in any way, you can still respec and offer tongues as usual, so go for it.
Rosaria, you can return her soul to her, but it has absolutely no benefits. Even as she's dead, she still functions normally. However if you take it to Ludleth, the tiny man in the throne, he'll bestow upon you Bountiful Sunlight, the best Heal Over Time miracle. It has ridiculous range for teammates, and heals quickly, but requires 45 Faith, 2 attunement slots, and 80 fp.
The Soul of the Twin Princes can grant you one of two swords, initially. Either the Lorian Greatsword, an Ultra greatsword that can buff itself with extra fire and be one of the highest damaging weapons in the game, or Lothric's Holy Sword, a somewhat mediocre straightsword with a decent ranged weapon art.
If you play through enough playthroughs, new game +'s or "Journeys", after obtaining both Lorian's and Lothric's swords, you can also combine them, losing them but creating a new greatsword called the Twin Prince Greatsword. It has the weapon art of both, at a loss of range, but is a fantastic greatsword.
It uses two slots while the one from Dancer's uses only one.
What are Journeys?
However, Bountiful Sunlight, the Heal over time, is good for acting like a buff for teammates, you know? Putting that heal on them before fighting, say, a hard boss. That way if anyone gets hit, they'll soon recover without having to drink anything.
Different uses, but I always pack Soothing Sunlight, the Dancer one, when I'm in my own world and not nerfed to lower level health.
Dancer is straight up, Rosaria's is regen, both are good, but different. I'd suggest Dancer's tho.
Journeys is another way to refer to New Game cycles. Like, New Game+ is Journey 2.
It gives you two different ranged attacks. It's almost like a pyromancers equivilent of the moonlight greatsword.
