The hardest bosses for me were:
Lothric Princes (I ended up having to resort to WotG spam for Princes on 2nd phase)
Soul of Cinder
For Soul of Cinder after failing about 5 times I decided to switch to using Potiff Rings + Brigand Twindaggers + Old Wolf Curved sword (offhand) for Soul of Cinder and just beat on him relentlessly and to my surprised it worked rather well. I staggered him 3 times and was able to skip his magic phase and Quick Step most of his attacks.
Nameless King took a few tries but he was easy once I realized that he has some "juke" moves where it looks like he is going to hit you, but then it's just a delayed attack. 1st phase, of course, was a breeze.
But now I'm doing an SL1 run and I'm stuck at Pontiff and Dancer. If I was still a teen I think these bosses would be easy but I'm in my 30s now, I just don't have the reaction for 100% perfect dodging to make it through these fights.
That cracks me the ♥♥♥♥ up. You just went berserker on his ass.
Vordt of the Boreal Valley was the easiest. Never lost a fight against him.

With dlc almost killed friede the first time (one final hit was all i needed, then a scythe to the face) than she become a wall. Ringed city they where all quite tough, but i cheesed Midir due to not being bothered to sit there and smack its head. Gael was hard as hell...got him now on ng+3 and he is a monster
1. Midir. First time at NG+2 with 120 SL. Before nerf. Spended 2 evening to beat him.
2. Nameless King. First time NG 120 SL. Took me 2 hours.
3. Old demong king. No kidding. At my 1st playthrough I went to wiki to see PVE builds. All listed builds were 120 SL BUT luckily (so I thought) I found build for 20+. Fire uchigatana build. It was said that all I needed was 20 vigor 20 luck (waste of stat points to say the truth) and could place all other stats where I want. Since it was my first dark souls game I was naive and thought that heavy armor will help me survive better. So I spened all free stats for vit. And when I entered old demon king room I had 20 vig 20 luck and 40 vit with cathedral knight set, no good shield (I also didn't know about stability at that time), and fire uchigatana that did crap dmg to this boss. To understand my struggle imagine Yorm battle without stormruler, but boss has much more moves and literaly 2-shots you. And when i FINALY managed to get him to 10% health (30-40 min battle without any mistake) boss gets on his knees, fire fades, I'm like "Hooray it's a repost time" and than BOOM - 1-shot for my char.
Most difficult: Nameless King. Took me several runs to get the timing right to properly dodge both phases.
Sage is understandable. Whack a mole boss plus bullet hell off-screen shenanigans...it's easy to get steamrolled by him if you don't have the right mindset.
Did you know about storm ruler? lol
So many embers used up on those guys.
1: Pontiff, Iudex Gundyr, Champ Gundyr, Oceiros, Greatwood, Yhorm, SoC (used bone once so technically 2)
2: Vordt, Crystal Sage, Deacons (got cursed :/), Demon King, Ancient Wyvern, Abyss Watchers, Gravetender, PvP Halfight, Demon bugs
3: Aldrich, DSA, Princes, Dancer
4-5: Gael, Dancer
5-8: Friede, Midir, Nameless
Most of that was greatshield cheese.
