I played something like this when the game just came out, even without the +3 version and the difference in damage absorption is pretty drastic if you really build for it. Have fun.
Are we talking PvP? Because from what I've heard, damage reduction in PvP was (or is) nerfed to oblivion in the past.
It's not Havelmonster levels from Dark Souls 2, but it does make a noticeable difference, if you stack ♥♥♥♥, use an upgraded Greatshield of Glory and something with good damage and swingspeed (any Straightsword, Axe) and you got yourself one of the most cancerous builds in the game.
If you want to go all out, use a raw Dragonslayer Axe and just push Endurance and Vigor, along with enough Vitality to wear your stuff.
This is why you see many people running around in clothes and rags.
The reason why people run around in clothes and rags is Fashion Souls.
Leveling Vit is quite handy as it gives Defense - not Absorb. Which is also a reason people use full gear, as you get 15 Defense on every armor slot.
Personally i also believe the "Reduced effect for Defense in PvP" is just a rumor spread to keep people from using those rings. Same goes for Clutch Rings.

It's not. But I would love it to just be a rumor. Or also I'd love it if it got fixed in some recent patch and I didn't get the news.
