For my pyro build, I kept some dark scaling equipment as back up for enemies with high fire resistance, as both infusions scale on the same stats. You can also use dark fire spells with the pyro glove, and they're pretty strong. Sages ring, witches ring, and fire clutch ring will help a lot too.
I would get the astora straight sword early on, raw infuse it, and keep it at least til you can get something infusable. If you're really spell focused, you can hang on to that all game as a side arm instead of infusing something else. It's solid damage and buffable with fire and dark, so it's a good backup.
A LOT of stuff in this game is weak to fire, so you shouldn't have too much trouble with this build once you get your basic spells.
There is two DLC weapons that will work great for melee with almost no stat investment in STR/DEX
I would do 40/40 split for faith / int for the Pyromancer, and atleast 30 attunement
