2-nd phase - do not try to stay too close to him (he will do large combos and break even greatshield) nor stay too far away. Stay like 3-4 meters from him. Most of the time he'll do charge atack with a little delay before he follows with other atacks. That delay is big enough to land a hit with greatsword and roll away.
3-rd phase. Stay away from him. He will charge you (easily evaded) and follow up with 2-hit or 3-hit combo. Just remember this combos and atack after them. Do not be greedy - make 1 atack and roll away.
Worked for me at NG+2 SL 120.
Just take him on solo. Actually learn to play the game, start playing Dark Souls 3 for the first time as opposed to playing Easy Souls with a gaggle of phantoms doing all the work.
If you are really having THAT much difficulty, use the carthus blood ring. Along with the Ring of Steel Protection +3, it should be nearly impossible for Gael to hit you.
