What do I do after I beat Slave Knight Gael?? Is the DLC over?

yes.

You can give the dark soul blood to the girl who will paint a new home though it does nothing.

And have you defeated the optional boss? there is 1 boss that is optional in this dlc and its a dragon, and its a really good dragon fight too.

Where can i fight the dragon? back on the bridge where i left him?

yeap he consumed the dark soul to get the dark soul blood so that you (which he knew you would come) would kill him and obtain that which he could not and take it back to his lady which then she names the next painting after you.

Basically the lore goes along like this...

Gael leaves the painting in search of a second ashen one to fight the one in the painting to burn the rot away. It seem that he knew you would accept this service so he also planned to get the dark soul blood, hence why he is also in the second dlc.

Now, while you were tending to his world he went to the dreg heap to find the dark soul, and obtain it to create the new painted world, but found the pygmies (yes multiple) that contained the dark soul blood to be dried and useless to him, but they still had the soul.

So he consumed them, one by one, obtaining the dark soul withen himself and gaining its corrupting power and his blood turned into its blood. You find him, mad, powerful, and filled with sorrow, because he knew he was to weak and not a fit champion to do this quest, and so with him becoming mad he attacks you, trying to take your "dark soul" which we can assume every human has at least a small part of a dark soul in them, because the dark soul made humanity.

You hurt him enough to show the dark soul blood, which makes him remeber, but he also know that he can not deliever this himself, so he continues the fight, making you kill him so that you can collect it, and bring back the pigment for the new painting.

Also, i want to point something else out about the dark soul blood.

We know the paintings are painted with blood, but they rot away, and the rot burned with fire, So why go out in all this danger to get the dark soul blood when (we think) every painting was made with the painters own blood (father ariandel used his blood to quench the thirst of flame for the painting)

My theory is that the dark soul blood can not rot, and that in the next game we see that may have something to do with dark souls, the whole world will be a painted world, because it was made with a blood that can not rot, and a blood that made humanity, so it can create a world to restore humanity as well.

she will paint a new world but you never see it.

which begs to question, what if the next game is set in a painted world? a world that the player helped make.

Imagine, if they make it so that the next game is based on the actions of this dlc, and that the world died but the painting will live on. Could you imagine? finding the exit of this painted world and you will see a barren world full of ash, and ruins. Knowing that you did it, that you caused the destruction of a whole world simply because you wanted to obtain the dark soul blood.

This is the last that we know of for a while at least.

however we shold also expect another souls like game that will maybe share the same world, but with a whole new story

Then it's crap, Im no expert when it comes to analyze everything, like statues and stuff, but I hardly believe that this DLC will answer most lore questions, till now I just saw little things, not even that big of a deal. If this is real the end, it's kinda poor...

I guess as always, it explains the big things and leaves the litle things open for interpretation. I don't see anything wrong with it though. The storylines of the maingame and the two DLCs are seperate and they have both clear endings: DLC: A new painted world can be drawn. Main game: The flame is extinguished, but it's remains still exist kind of "beyond the dark", so it might start a new age of fire sometime.

In Dark Souls, the storyline is always - in a good way - over the top. It's about the destiny of the whole world. It eihter ends, or continues, or there is something new. There is not much room for anything else.
