Well you can get both quite fast but I just saw you are new to ds3 so I don't want to spoil it.
If you want to focus on str and fth try to farm http://darksouls3.wiki.fextralife.com/Greataxe from highwall of lothric. It's great for str build and can last you till the end of the game potentialy.
Still I would go full fth or full str. A str/fth paladin type build with support spels will take him well past sl 160.
I had one and only bothered with sacred oath for coop boss fights. And even thet Sunlight Straight Sword was asking me "why bother"?
No doubt but in terms of armour etc, the herald is basically already a Paladin build at the very start of the game, Knight's not the best choice for it, but can be made into a paladin with a lot of stat investment.
Yeh that is true if it's for pure fun and rpg and he is not interested in min/maxing. Plus the description of the class has so much fluff when it comes to your role in ds3
Ok, so ignore all the 'idiot' replies that suggest you smash into Lothric Castle and defeat one of the hardest bosses. Sheesh, some people (insert eyeroll).
Already proven to be one of the best starting weapons for any faith related build is the Astora Straight Sword with Raw infusion. As mentioned, the Herald starting class is best for this, not the Knight though you can drop a few points into faith to achieve the same goal.
Raw infusion allows you to allocate points in early game towards Vigor (HP) and Stamina to keep you alive longer. If using the Knight class, you can buy the Heal Aid spell and a talisman from the Shrine Handmaiden.
