Which is considered the better set?

Looking at them now, they seem pretty equal, Artorias duds seem to have better resistances (except fire) and Firelink better poise. (Which only matters if you are using heavier weapons)

So I guess it depends on your weapon, but really, the difference in quality between them will be minimal in action.

Yeah, that's about what I saw. Firelink has slightly better physical protection for the most part and is slightly lighter.

As for weapons, I use a shield in my left hand and a Refined Longsword+10 in my right.

Then poise will do very little for you, and the Wolf Armour is probably your best choice due to the well rounded defences, although you can have Firelink as an alternative if you know there´s no elemental damage around, or only fire.

honestly, armor is next to useless in this game. I go by what I think looks good because the defences dont really have a big effect
