Ancient Wyvern, although terribly easy and forgetable, is probably another candidate.
I'm unsure but I believe Dancer and Vordt of Boreal Valley are also fought at their greatest state-- albeit turned into essentially beast people, their skills were likely amplified to cause as much destruction as possible. There's little to no information on the beast metamorphasis with the exception of armor-infused "hides" and that Pontiff Eye rings directly cause the transformation, so it's unclear on if they're truely feral or have some level of comprehension.
Yhorm is someone I like to think is fighting at his prime, though he used to wield a shield as well, so it's unsure whether he was more adept using a sword and shield, or the current machete.
I don't think he's fighting at his prime. He was basically brought back to "life" like most other lords of cinders and has lost everything that mattered to him (hence why he doesn't have a shield anymore).
It wasn't directly related to him being a Lord, but what his actions are overall; this is also the reasoning on him turning his sword into the machete we all know and love today.
