No one used the faraam set in DkS2 because the helmet was ugly. It was not even close to the trailers. DkS3 got it right.
Its him who shows up in all trailers as the main character. Firelink Armor is not exactly the mascot, its just supposed to represent Dark Souls 3 as the end of the series - weird and epic in the same time.
I mean... Its the armor of the boss, not ours.
Elite Set was canon in DS1.
In DS2 it was the Faraam Set.
And in DS3 its the default Knight Set for Knight starting class, since he's the one who we always see in all DS3 trailers, being beaten in the face by bosses.
Firelink armor is not canon i believe, considering that its an armor set worn by the final boss and you only get access to it once you beat the game.
