For early and mid, I found that the starting sorcerer's staff does a decent job. The problem is, magic won't do much damage until you hit at least 40 INT. The best staves I found are the whitebranch sorcerer staff found in Irythill (casts faster, which means you can equip another ring instead of the fact-casting one, since they don't stack) and the crystal sage staff, found in grand archives (weak staff compared to others but its weapon art gives a serious magic buff).
As for the weapons, I'm having a lot of fun with the moonlight greatsword (soul of Oceiros) and I use a pyromancy flame as a second weapon (doing some sorta mage/pyro build). I think that a straight sword buffed with crystal weapon does decent damage but I prefer bastard sword-type movesets so I can't say much. The crystal sage rapier doesn't do much damage, it's more a stunlock kind of weapon. The sword of judgement wielded by Sulyvhan (I think it's this one, with a pale blue glow) is fine, but is redundant with moonlight greatsword.
That's all I found by myself, I hope this helps. There are not much weapons I found that are really worth it early game, except astora's straight sword that is decent.
Another good choice if you wanna invest 0 points in str or dex is the Astora SS, you can get it in highwall, it's light and doesn't have high stat requirements and the damage with raw infusion is quite hefty, plus you can buff it.
