Tips for Lothric Castle?
I run a strength build with smaughs hammer, and I am having so much trouble with it it's getting really irritating. About 90 percent of the hits I get also come with a hit towards me, yet waiting for those one or two attacks where I can get a free hit would stretch every encounter to at least a few minutes. So, how do I deal with the abundant lothric knights and cathedral knights?

Step 1. Obtain small shield. Step 2. Become parry god.

Just...run? I mean you dont need to kill everything in your way.

Yea running through there is far easier then trying to kill the enemies there, all of them do ridiculous damage if you do choose to fight them anyway, mainly the cathedral knights and the blue red eyed lothrics with Ultra greatswords
I used to be like you. I killed everything I saw because the thought of something around me living annoyed me greatly my first run.

My second one I just used hidden body and ran bonfire to bonfire.
I can see you are in the new game. Kill everything in your path is a basic practice in NG.
Once in NG+ or higher, you can use hidden body and parkour the whole map.
I strongly recommend you use a straight sword or a ultra great sword.
Since a hammer can't kill an enemy with one hit and it's normal attack CD time is bit long.

You have running attack, jumping attack, R1 and R2, all with different speed/timing/poise damage. You can also kick. You can also equip a different weapon for that given area. You can also have an offhand item such as parry shield/weapon. There are so many possible solutions to your issue that it's weird that you didn't find any on your own.

You want to look for openings. With something as big and unweidly like Smough's, you need massive windows. Either backstabbing, parrying or just rolling like a madman, hoping that he's use one of his long attack chains with a definite ending you can exploit.

honestly if you don't mind spending a couple of levels in intelligence or just using rosaria to respec rapport is definitivly worth the trouble for that area as ALL Cathderal/Winged/Lothric knights (exception for the red eyed UGS wielding one in the dragon baracks) can be rapported
