They do comparably low damage entirely inappropriate to their size and weight, which is even outright lower than some examples of smaller weapons, their attacks are slow and since you have basically infinite rolls you could roll out of ANY greater weapon should you face one, and also they're laughably easy to parry if you dare to one-hand them, and looking at the amount of parry-spammers recently using a greater weapon one handed is less smart than using a broken straight sword
There are only a few examples that are anyhow useful (judging by the fact that you see them more in PvP than others), such as the great club because of its R2, profaned ultra-greatsword because it comes with included fire damage and a free fire buff, dragonslayer greataxe because it simply is one of the weapons with the most AR, or black knight greataxe/ultra greatsword because their AR makes them often chosen by parry fishing hornet ring users, but the "normal" ones like the Zweihander are kind of neglegible
For PvE however they can be amazingly good weapons in their entirety, as many of them have unique attributes from one another which can greatly aid you if you need to be situational; the spiked mace from the evangelists can do horribly much bleeding damage, the astora xl ultra-greatsword can do thrusting attacks which can launch enemies far off and keep them at bay, the demon greataxe has a devastating weapon art, and so on and so forth
If you invest enough stamina as well, you can output a few more attacks which usually stagger the vast majority of enemies, especially the annoying fast moving ones like Carthus grave wardens or jumpy ADHD face humper ghrus
Overall I'd advise you to try the weapons out one by one, and find one that suits your build or playstyle, as ultras, greataxes and greathammers vary greatly from one another too
As a personal recommendation: Use ultras as first because for me they've been the easiest greater weapons to get used to and because they have seemingly the least requirements, such as the Astora XL. Also they almost all have wide sweeping movesets which can cover a large area, something that greataxes or greathammers don't have (at least their R1/R2 do not in my book). For them either way I'd recommend the spiked mace because of its moveset, or the black knight greataxe with one hand as it also has a sweeping moveset unlike other greataxes
Every small weapon has something greatweapons don't: speed.
Also what Hat Skeleton said any greatsword or axe is good because they hit hard and have a lot of hyperarmor.
Otherwise, I would use Dragonslayer (Greatsword, the one that looks like Gut's sword).
But strictly Greatsword wise, Claymore is never a bad choice. Onyx Greatsword is neat and powerful with Dark.
