Reaching at least 27 of it (for 1000 health) is advised.
Vitality should be level up if you intended on wearing heavier armor or using VERY heavy weapons.
The point is to have <70% equip load to keep your rolls efficient.
Or compensate by using a greatshield instead. Big one.
Endurance increases stamina which means more rolls / attacks in a row without taking a break.
Users of small weapons and those who don't like shields can keep it low, but those who heavily rely on guarding or use very big weapons that eat hell ton of stamina probably should invest into it. You stop getting new stamina after 40 points of endurance though, so there's no point to level it up higher than that.
Strength and dexterity are responsible for your damage output and what melee weapons in particular you can use efficiently.
Generally its a good idea to equally level up both since 90% of weapons in this game reach the peak of their performance with quality builds (having both high STR and DEX), however there are some exceptions.
Most greataxe and greatmace type weapons can work with strength alone for example.
Attunement, INT and FTH are stats for casters. Attunement gives you more FP and spell slots, INT is required for magic spells, FTH is required for miracles and the combination of the two is required for pyromancies which scale with both.
Most stats lose their efficiency after 40 points and there's no reason to level up them higher.
Except for some items and spells that can require higher stats requirements up to 50.
That's about it.
(a sidenote: if you have the DLC, then later on you'll want to challenge it and pick up Friede's Scythe.)
I would really advice you to read the link i gave earlier, that will answer like 90% of your questions and already has best weapons, armor, rings and spells to use.
Finally, if something you want doesn't quite have the scaling you want, see if you can infuse it to match what you want better, or if eliminating the scaling in favor of high base damage (raw infusion) is more favorable.
