Sunlight shield
Is it good to use for protecting and parrying?

Imo any shield is pretty useless.

You ideally just don't want to get hit at all, and rolling takes less stamina than getting smacked even if you have a large shield that can absorb 100% of the damage (rolling also grants some invincibility time). You can get staggered too because shielding is basically a hit, and then you'll get parried from the front or even get hit, so you are just losing more stamina with a shield up.

I think the main goal is getting to a 2-handed weapon and getting larger weapons. Shielding is terrible especially in a 1v2 where one will always think they are 'clever' by going behind you even if your shield is holding.

With the terrible lag in this game you ideally want to just be able to hit and then dodge, taking a chance with parrying will mean you are just taking a gamble against laggers and ideally you want to survive long enough to make a host jump off a cliff in frustration after killing all his phantoms. Put on the loincloth and lay down to show them all your ♥♥♥♥♥ when they arrive, so they know you are special.

Being light with a heavy hitting weapon is much better for PVP but not always against a monster or a boss (although dodging is better against bosses too probably).

After around '30' most stats only add a tiny amount of value, i.e. vigor only adds about '10' health when it used to add much larger chunks, and you start to see diminished returns above those values; and really the only useful stat to go above 30 is Strength because you can wield heavy hammers and useful heavy weapons if you max out around 50.

The point is you can't very much higher than ~1100hp anyway and you can't really be an effective tank build with a shield.

Only npcs/monsters can officially do that since they can technically have a lot more health.

In summary: Shields can be useful but generally not later on when the better options come. Not going to tell you how you should play though.
