Can I use cheat engine on a non-serious, single player only character?

I just finaly beat the game for the first time on my first character, mostly without multiplayer (except for the dragonslayer armour) completely by accident. Planning to do some pvp stuff now that I can actualy play the game.

But... I also just rewatched one punch man. So...

I kinda want to make a fat-but-flat tall purple midget run around in a loincloth, a fancy hat and have him kick/punch things to death.

If I cheat engine my way to beyond perfect stats am I going to be banned from multiplayer accross all characters? Is there something I can do to avoid that beyond not using cheatengine and just maxing levels naturaly?

You'll get banned, the whole save file and your account will get banned

You can't really use cheat engine and play online without being flagged by the anti-cheat.

pretty much you can item drop offline and then go online, but for safety just play offline

Dude just don't. There are reports that From has stopped lifting softbans. So one mistake and you are forever banned from playing online. DS3 is at its finest when you challenge yourself (also with friends) you don't need CE if your goal is to have as much fun as possable.
