Claymore is a great sword. Not an UGS.
Farron's greatsword is a dex weapon, but the rest of UGS are str weapons. But obviously the advantage of a quality build is that you should be able to use pretty much every weapon quite effectively, so I'd just advise you to try them all out and see which one you like the most.
In terms of sheer damage, the Lothric Knight Greatsword definitely takes the top, but it's heavy, and many people complain about splitting damage types between physical and blah blah. When you hit for about 1200-1500 with a fully charged R2, you don't need to worry about split damages too much.
That being said, the Zweihander, when Refined, has some of the best scaling of the UGS weapons, with a Mid-B for STR, and Mid-C for DEX, but the damage will always be over 100 off of the Lothric.
