First of all, his 2nd phase always starts with a rushing attack and a 360 halberd hit at the end of that. So keep some distance, let him do the rotation and about the 270 degree mark, parry him.
In general, all his halberd strikes can be parried, but some are harder to pull off. Don't try to parry him mid combo; just roll away and then run away into position.
