Parrying Champion Gundyr
I really can't seem to figure this one out. It's easy to get through the first half of the fight, it just takes three parries to knock down half his health. But then he goes into berserker mode and just starts spamming massive and mainly unparryable special attacks. Even when I do get a few parries I frequently don't get the riposte, or it doesn't do anywhere near the damage it did in the first half. I parried him four times in the second half of the fight once and it still didn't knock his health down below about 25%. Eventually I just get exhausted and slip up. Anyone got any tips ? Thanks.

Since you can parry his first phase, keep it up there, I'll only give some tips for the second one.

First of all, his 2nd phase always starts with a rushing attack and a 360 halberd hit at the end of that. So keep some distance, let him do the rotation and about the 270 degree mark, parry him.
In general, all his halberd strikes can be parried, but some are harder to pull off. Don't try to parry him mid combo; just roll away and then run away into position. Sometimes, he'll do the jumping attack he uses as "Iudex", which is parriable but hits you hard if you miss it. I suggest rolling towards him, hit him once when he lands, then run away into position.

Practice parrying iudex on a warrior with empty hand parries. Phase 2 roll left all the time till you see a move you know how to parry. Parry and heal if you have to, don't always riposte.

As others said, only parry one or 2 attacks you know how to, everything else you should dodge. You can try baiting those attacks you are comfortable parrying by staying at a given distance from him, not always works tho.

Are you doing a parries only challenge run or what? I mean, if your only goal is to simply kill him and parrying isn't working, just fight him the normal way.

Thanks for the tips everyone, much appreciated. I think I need to take a rest for a while before trying it again. I'm not doing a parries only challenge but fighting him the normal way takes a long time, he's not that difficult to parry, at least in the first half. But in the second half he keeps spamming that charged spin attack which is difficult to evade, I keep waiting for him to do one of the parryable attacks he does in the first half but they seem to be few and far between. He also keeps spamming that double shoulder block attack which can do a lot of damage. Just have to keep practicing, I'm pretty sure that for my high dex character parry is the quickest way to get through this.

If you just want to cheese him with parries, you can try holding a black knight shield for turtling and a parry shield to use when luring his jumping attack. Simply try to run away from him while making sure to avoid damage by rolling or blocking. When you are far away enough he should do a jumping attack, which is extremely easy to parry. If you learn to parry that attack, knowing how to deal with just one attack should make the cheese infinitely easier.
