The question is utility.
Vordt's hammer is, well, hammer, has frost build up and persevance for trades.
Dragonslayer Greataxe has amazing WA for burst damage and Yhorm's has a very high reach, probably the highest reliable AR of all 3 of them and the warcry to deal even more damage.
Dragonslayer has a ridiculously powerful (slow) WA and split damage. May have the highest base AR but not the highest damage. Pretty much the same moveset as Yhorm's but less range and a tad bit heavier. Unlike Yhorm's the 2h R1 combos which is very nice.
Yhorm's has the most base damage on a STR build by a good margin, and the AR goes up even more with the warcry WA. Its WA R2 is okish at catching rollers which can be helpful. Main drawback is the fact that the 2hR1 doesn't combo. However the 1H attacks do, and even 1H this hits very hard so a lot of people choose to dual wield a faster weapon along with Yhorm's.
