Are there any fun but more streamlined/simpler games like Divinity 1/2?
Preface: these are not the kinds of games I usually play, even Mario vs Rabbids is a solid challenge for me to get through.

The games are really interesting and engaging but I have no history with isometric strategy titles and I am getting absolutely reamed by level 3 encounters despite being a level higher and putting a lot of time into preparation and builds and building up a solid team/inventory.

I win encounters and debate restarting anyway due to the amount of scrolls I had to use.

I am making incredibly slow but steady progress it just doesn't feel good to keep playing when it takes me so long to rob a single store or take down 6 goblins and a golem.

Are there any similar games that have a more 'rogue-likey' feel like I'm used to? You know; with generally the same level of difficulty and maybe even some exploration but running your guy into a wall over and over is kind of how you progress and not just a frustrating result of you sucking at these kinds of games.

There's a game i've never played but sounds pretty neat and it's a roguelike, tactic-strategy rpg named Othercide
Into the Breach and FTL are somewhat similar while being simpler to learn. They're more casual but challenging tactical strategy games.
There's a couple others I haven't' played: Fae Tactics, Tactics Ogre that are closer to their progenitor Final Fantasy Tactics. Some others like Triangle Strategy borrow their design from Fire Emblem.
I think maybe trying Divinity 2 on story mode could also be a fun way to play with the mechanics. Much of it is still role playing and puzzle solving that you're still going to face a stiff challenge, but it's not the grueling quickload/quicksave mess. Roadblocks I face in Divinity 2 on tactical difficulty are usually because I can't puzzle out what to do. I bet it's still challenging on story, Divinity 2 is mean.

yeah maybe that's what it is, its definitely not a genre I play super often so I don't have a lot of experience to carry over to give myself an easier time, I'll try a few hours of story and as long as its not pokemon-tier easy it might be the way to go, thanks and I'll check out those other suggestions too.

If you want something in the same isometric RPG style, Baldurs gate games are amazing,

They can be difficult or easy depending on the type of character you play,

For example in Baldurs Gate 2 you can play as a thief with max stealth and traps and just Sneak in ,set a bunch of traps before the fight, bring in your party , pause as soon as you see the enemy and hit it with a bunch of spells and your traps will go off and probably kill everything before it can even react.

Another one I like is Disgaea 2 from the Disgaea series. Just funny anime shenanigans. And I forgot, of course, Xcom. Both more rogue like and strategic than most of the games I listed.
There's definitely projects I've never seen, but the skill ceiling in all of these games is really impressive.

Any mindless berserker classes that can achieve a similar result with less preparation and more bashing?

Disgaea requires grinding to get to the point of doing massive damage in one turn, either by replaying missions, or running a gauntlet of procedurally generated dungeons and beating the boss at the end. I only recommend getting it on sale, since its a ps2 game from 2003.
