Probably the only noticeable difference in gameplay is that in the original version you could abuse sneaking to make the game REAL easy. In EE you can't. Wether that's a good thing or a bad thing that's up to you.
EE also has controller support which is neat I guess, I haven't tried to play this game with a controller ever.
There is no reason to play both. the story content and things like that is exactly the same.
1) You have way more fights in Classic, mainly due to the fact that end game you fight your way into an important building while in EE you puzzle the same way.
2) Characters are WAY stronger in Classic, mainly because you level a bit faster and the end game gear you find is MUCH more powerful than in EE (in fact a bit too powerful)
3) There is one character a good choice in Classic - the sneaking rogue - which is not in EE and there is one character in EE - dual wielding melee or mage - which is not in Classic
4) The hints in your logfiles how to proceed are more straightforward in EE, making it harder (careful reading in both cases) to miss important steps and have to go back
5) EE is more generous with gold. You can acheive more earlier (by acting in 4 plays netting 810 gold each at character level 2 to 3) and the traders are better equpped with more gold (scaling with level advance)
6) Magic is stronger in Classic because the magic level only determines the number of spells you can learn but not their quality (you can acheive high level spells already at magic school level 1 or 2, they just require more action points below a treshold magic school level). And because you have more spells to choose from, EE removed quite some spells which are similar to each other in each school OR which make the game easier
